TORO TORO RESTAURANT LTD is a steakhouse restaurant and represents Latin American culinary diversity in the hospitality industry.

We are looking for a Sushi Chef with a passion for hospitality and a drive for excellence to oversee and operate our well-established and highly-acclaimed restaurant, TORO TORO at Mercury Tower by Zaha Hadid Architects.

•Collaborate closely with the Executive and Sous Chefs to maintain the high culinary standards of Zengo Restaurant Limited's sushi offerings.
•Stay informed about current trends in sushi and Japanese cuisine, incorporating them into the menu while aligning with the restaurant's style and guest preferences.
•Work alongside the culinary team to ensure cohesive kitchen operations and a seamless dining experience.
•Maintain an in-depth knowledge of sushi preparation techniques, fish quality, and ingredient sourcing.
•Assist in developing and executing sushi-related culinary strategies, contributing to the menu's innovation and diversity.
•Participate in regular kitchen team meetings to discuss operational matters, guest feedback, and service improvements.
•Ensure the sushi station is maintained to high standards of cleanliness, organization, and safety.
•Interact with guests to obtain feedback on sushi dishes and address any sushi-specific concerns or inquiries.
•Manage inventory and ordering for the sushi station, ensuring optimal stock levels and quality of ingredients.

Qualifications


•Culinary degree or equivalent experience, with a focus on sushi and Japanese cuisine.
•4+ years of experience in sushi preparation, preferably in a high-end restaurant or specialized sushi establishment.
•Experience working under an Executive Chef or Sous Chef in a structured kitchen environment.
•Proficient in specialized sushi equipment and techniques.
•Exceptional sushi preparation skills and knowledge of Japanese culinary traditions.
•Strong understanding of ingredient quality, particularly in seafood selection for sushi.
•Excellent communication and interpersonal skills, with an ability to engage positively with guests.
•Highly motivated, professional, and passionate about sushi and culinary arts.
•Ability to work effectively within a team environment, under the direction of the Executive and Sous Chefs.
•Proactive in maintaining high standards of cleanliness and organization at the sushi station.
•Demonstrated ability to mentor and develop junior culinary staff.
•Skilled in sushi-specific kitchen management and preparation techniques.
•Committed to working collaboratively and respectfully with the wider culinary team.
